Overview

Moonshine Creek Distillery is a family-owned and operated micro-distillery focused on producing craft spirits that honor local history, culture, and tradition. The distillery has made a name for itself with its barrel aged spirits and chocolate liqueurs.

Their number one sipping cocktail is their Apple Crumble, made with sweet apple cider, caramelized sugar, and cinnamon. Its become an extremely popular product and the distillery is planning to significantly increase production to keep up with the demand. Using a natural fining agent, MycoKleer, would allow Moonshine Creek to increase production by saving time, energy, and at the same time reduce costs.

  • Moonshine Creek Distillery faced a significant challenge with their Apple Crumble cocktail, as the unclarified apple cider used in the recipe caused natural sedimentation to settle in the bottles over time. Despite investing considerable effort and resources into educating customers that the sediment was natural and harmless, many patrons mistakenly believed the product was old or spoiled, impacting customer confidence and sales.

To address this issue, Moonshine Creek initially implemented a filtration system designed to reduce haze and sedimentation. However, this solution proved costly and labor-intensive. The system required expensive filters that frequently clogged during production, leading to production delays and inefficiencies. Refining a single batch of the Apple Crumble cocktail took up to three days, with operations often coming to a standstill due to sediment buildup.

Determined to find a cost-effective and efficient solution, Moonshine Creek continued to explore alternatives. This search ultimately led them to MycoKleer, a natural fining agent developed by Chinova Bioworks, offering the potential to streamline production while maintaining the cocktail’s high quality.

  • Moonshine Creek Distillery collaborated with Chinova Bioworks to address the sedimentation and haze challenges in their Apple Crumble cocktail. Chinova provided samples of MycoKleer, a natural fining agent, for pilot testing. The results were immediate and impressive—MycoKleer effectively eliminated haze and sediment, delivering the clarity and consistency Moonshine Creek sought for their product.

Encouraged by the successful trials, Moonshine Creek integrated MycoKleer into a full production batch of the Apple Crumble cocktail. The results went beyond improving clarity; the distillery also realized significant savings in both labor and production costs.

"After settling and using filtration, we used to lose 10 liters out of every 50-liter batch. With MycoKleer, we now save an additional 3 liters per batch," said Joshua Clark, Vice President and Co-Owner of Moonshine Creek Distillery. "The saved product and reduced processing hours quickly pay for the MycoKleer product."

The switch to MycoKleer simplified the production process. Previously, the team faced labor-intensive tasks like frequent filter changes and constant monitoring of temperature and pressure. With MycoKleer, the process required fewer filter changes and reduced wait times, making production more efficient and manageable.

By adopting MycoKleer, Moonshine Creek not only enhanced their product quality but also streamlined operations, ensuring a consistent and customer-pleasing Apple Crumble cocktail.

  • MycoKleer Drives Significant Savings and Increased Efficiency for Moonshine Creek

By adopting MycoKleer, Moonshine Creek Distillery has unlocked substantial cost savings and operational efficiencies. The use of MycoKleer is estimated to save the distillery around $1000 per 1000-liter batch in material costs alone, in addition to a considerable reduction in time and labor. This enables the distillery to streamline production, reduce waste, and ultimately increase their production capacity.

"Working with Chinova Bioworks was a great experience," said Jeremiah Clark, President and Co-Owner of Moonshine Creek Distillery. "Their R&D team provided samples, free testing, and tailored recommendations that allowed us to seamlessly integrate MycoKleer into our production process for the Apple Crumble cocktail."

The successful collaboration with Chinova Bioworks has not only improved the quality and clarity of Moonshine Creek's Apple Crumble cocktail but has also delivered significant financial and operational benefits, positioning the distillery for continued growth and success.
